- In a large skillet, heat olive oil over medium heat.
- Add diced potatoes and cook for about 10 minutes until they start to soften.
- Add diced beets, onion, and garlic to the skillet. Season with salt and pepper.
- Cook for another 5-7 minutes until the vegetables are tender.
- Using a spoon, create 4 wells in the hash mixture and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes until the eggs are cooked to your liking.
- Garnish with fresh parsley before serving.
