Pickle-Stuffed Chicken Breast

- Preheat oven to 375°F (190°C)
- Cut a pocket into each chicken breast
- Fill each pocket with pickles and cheese
- Season chicken breasts with salt and pepper
- Coat each chicken breast with breadcrumbs
- Heat olive oil in a skillet over medium-high heat
- Sear chicken breasts until golden brown on both sides
- Transfer chicken to a baking dish and bake for 20-25 minutes or until cooked through
- Serve hot
