- Add diced beets, red lentils, coconut milk, curry powder, salt, and pepper.
- Simmer for 15 minutes or until lentils are cooked through.
- Serve over rice or with naan bread.
Notes
You can add more vegetables like spinach or bell peppers to the curry.
