Beet and Chickpea Curry

- In a large pot, heat olive oil over medium heat. Add diced onion and garlic, cook until softened.
- Stir in curry powder, cumin, and turmeric. Add chickpeas, diced tomatoes, beets, and vegetable broth.
- Simmer for 30 minutes until beets are tender. Season with salt and pepper.
- Serve over cooked rice.
Notes
Garnish with fresh cilantro and a dollop of yogurt if desired.
