- 1. Cook quinoa according to package instructions.
- 2. Cut the tops off tomatoes and scoop out the insides.
- 3. Mix cooked quinoa with any additional veggies or herbs, then stuff into tomatoes.

Feel free to add cheese on top before baking if desired.
