- 1. Preheat oven to 375°F.
- 2. Cut off the tops of the tomatoes and scoop out the insides.
- 3. In a bowl, mix cooked quinoa, diced cucumber, and chopped pickles.
- 4. Stuff the tomatoes with the quinoa mixture.
- 5. Bake for 10 minutes until tomatoes are tender.
Notes
Serve with a side salad for a complete meal.
