- Rinse quinoa under cold water.
- In a saucepan, combine quinoa and water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let cool.
- In a large bowl, combine quinoa, beans, bell pepper, cucumber, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
Notes
Chill the salad for an hour for enhanced flavor.
