- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the solid coconut oil with brown sugar until smooth.
- Add almond milk and vanilla extract to the mixture and mix until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in vegan chocolate chips.
- Drop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
