- Preheat the oven to 400°F (200°C).
- In a large bowl, toss beets with olive oil, cumin seeds, ground coriander, ground ginger, ground turmeric, salt, and black pepper until evenly coated.
- Spread the beets on a baking sheet in a single layer.
- Roast in the oven for 20 minutes or until tender, turning halfway through.
- In a small bowl, whisk together the lemon juice, Greek yogurt, honey, and garam masala.
- Once the beets are done roasting, let them cool slightly and transfer them to a serving bowl.
- Drizzle the yogurt dressing over the beets.
- Garnish with chopped mint leaves and toasted pistachios.
- Serve immediately.
