Garlic Scape & Pickle Pasta

- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add the chopped garlic scapes and sauté for 3-4 minutes until they begin to soften.
- Stir in the red pepper flakes and continue to sauté for another minute.
- Add the cooked spaghetti to the skillet, and toss with the garlic scapes and olive oil.
- Gradually add the reserved pasta water a little at a time until the pasta is well coated.
- Mix in the chopped pickles, Parmesan cheese, lemon juice, salt, and black pepper to taste.
- Continue to cook for another 2-3 minutes, stirring occasionally, until everything is heated through.
- Remove from heat and stir in fresh parsley.
- Serve immediately, garnished with extra Parmesan and parsley if desired.
