Quick Roasted Beets with Orange Zest and Pistachios

- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sliced beets with olive oil, salt, and pepper until well coated.
- Spread the beets in a single layer on a baking sheet lined with parchment paper.
- Roast the beets in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized.
- While the beets are roasting, zest the orange and set the zest aside. Then juice the orange and mix it with balsamic vinegar in a small bowl.
- Once the beets are done roasting, remove them from the oven and let them cool slightly.
- Drizzle the orange juice and balsamic mixture over the beets and gently toss to coat.
- Sprinkle the orange zest, chopped pistachios, and fresh mint over the beets.
- Serve warm or at room temperature.
