- Heat olive oil in a large skillet or wok over medium heat.
- Add sliced onions and minced garlic to the pan, sauté until onions are translucent, about 5 minutes.
- Increase the heat to medium-high and add the sliced green peppers, julienned carrots, and dragon tongue beans.
- Stir-fry the vegetables for about 8-10 minutes until they become tender but still crisp.
- In a small bowl, mix together soy sauce, rice vinegar, sesame oil, ground ginger, and red pepper flakes.
- Pour the sauce over the vegetables in the skillet, stirring well to coat evenly.
- Season with salt and freshly ground black pepper to taste.
- Continue to cook for an additional 2-3 minutes to allow flavors to meld.
- Remove from heat and stir in the chopped fresh cilantro.
- Serve immediately, garnished with additional cilantro if desired.
