- Preheat your oven to 400°F (200°C).
- In a large bowl, combine delelcta squash, marrow, potatoes, carrots, and tomato.
- Drizzle the vegetables with olive oil and season with salt, pepper, thyme, and rosemary. Toss to coat evenly.
- Spread the vegetables in an even layer on a large baking sheet.
- Roast in the oven for 45-50 minutes, stirring halfway through, until the vegetables are tender and golden brown.
- While vegetables are roasting, prepare the vinaigrette: In a small bowl, whisk together balsamic vinegar, minced garlic, and a pinch of salt and pepper.
- Remove the vegetables from the oven and transfer to a serving platter.
- Drizzle the herbed vinaigrette over the warm vegetables and garnish with fresh parsley.
