- Preheat oven to 400°F (200°C).
- In a large bowl, combine the sweet potato squash and potatoes with olive oil, cumin, coriander, turmeric, red chili powder, salt, and pepper.
- Spread the mixture on a baking sheet and roast in the oven for 20 minutes, or until the vegetables are tender and slightly crispy at the edges.
- Meanwhile, in a large salad bowl, combine the chopped romaine lettuce with lemon juice and a pinch of salt.
- Once the roasted vegetables are done, let them cool slightly, then add them to the salad bowl with the lettuce.
- Toss the salad gently to combine all ingredients well.
- Sprinkle with fresh cilantro before serving.
