Greek-Style Stuffed Bell Peppers

- Preheat oven to 375°F (190°C).
- Cut tops off bell peppers and remove seeds.
- In a skillet, brown ground beef with garlic. Drain excess fat.
- Mix cooked quinoa, pasta sauce, parsley, and beef. Season with salt and pepper.
- Stuff peppers with the mixture and place in a baking dish.
- Bake for 25 minutes. Sprinkle feta on top and bake for 5 more minutes.
- Serve warm.
Notes
For a vegetarian version, replace beef with mushrooms.
