Curried Lentil Soup with Kale

- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté for 3 minutes.
- Stir in curry powder, cook for 1 minute.
- Add lentils and vegetable broth, bring to a boil.
- Reduce heat and simmer until lentils are tender, about 20 minutes.
- Stir in kale and cook until wilted.
- Season with salt and pepper before serving.
