- Heat olive oil in a pan over medium heat.
- Add the onions and sauté until translucent, about 3 minutes.
- Add the bell peppers and garlic to the pan, and sauté for an additional 3 minutes until the peppers are tender.
- Remove the pan from heat and let the mixture cool for a couple of minutes.
- In a large mixing bowl, combine the cooled onion and pepper mixture with the diced tomatoes.
- Add lime juice, ground cumin, smoked paprika, salt, and pepper. Mix well.
- Gently fold in the chopped cilantro.
- Taste and adjust seasoning if needed.
- Serve immediately or refrigerate for 10 minutes to let the flavors meld.
