- Preheat oven to 375°F (190°C).
- Cut tops off peppers, remove seeds.
- Mix beans, quinoa, corn, tomatoes, and chili powder.
- Stuff peppers with mixture, place in baking dish.
- Bake for 30 minutes or until peppers are tender.
Notes
Serve with a dollop of sour cream if desired.
