Grilled Pork Chops with Roasted Potatoes and Sautéed Bok Choi & Radishes

- Preheat grill to medium-high heat.
- In a small bowl, mix together 2 tablespoons olive oil, salt, black pepper, garlic powder, smoked paprika, and cayenne pepper.
- Brush the pork chops with the spice mixture on both sides.
- Heat a large cast-iron skillet or grill at medium-high. Grill pork chops for 4-5 minutes each side until juices run clear.
- While the pork chops are grilling, preheat the oven to 400°F (200°C).
- Toss the sliced potatoes with 1 tablespoon olive oil and chopped rosemary.
- Spread potatoes on a baking sheet and roast for 20-25 minutes until golden and crispy.
- In a large pan, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
- Add bok choi and radishes, stirring occasionally for about 5-7 minutes until tender.
- Add soy sauce to the pan, stirring vegetables to coat.
- Serve grilled pork chops warm with roasted potatoes and sautéed bok choi and radishes. Garnish with sesame seeds.
