Vegetable Stir-Fry with Tofu

- Heat olive oil in a large pan over medium heat.
- Add tofu and cook until golden brown, about 5 minutes.
- Remove tofu and set aside.
- In the same pan, add sesame oil and garlic, sauté for 1 minute.
- Add broccoli, bell pepper, and snap peas, stir-fry for 5 minutes.
- Return tofu to the pan, add soy sauce, salt, and pepper.
- Cook for another 3 minutes, then serve.
Notes
Serve with brown rice for added carbohydrates.
