Spinach and Egg Breakfast Skillet

- Heat olive oil in a skillet over medium heat.
- Add green onions and tomatoes; cook for 3 minutes.
- Add spinach and cook until wilted.
- Make 8 small wells in the mixture and crack an egg into each.
- Cover and cook until eggs are set, about 10 minutes.
- Season with salt and pepper before serving.
Notes
Serve with whole grain toast for added carbohydrates.
