- Heat sesame oil in a pan over medium-high heat.
- Add ginger and bell pepper; stir-fry for 3 minutes.
- Add bok choy and soy sauce; cook until bok choy is tender.
- In a separate pan, cook salmon fillets until golden and cooked through.
- Serve stir-fried vegetables over rice with salmon on top.
Notes
Substitute rice with quinoa for a different texture.
