Arugula and Goat Cheese Frittata

- Whisk eggs with salt and pepper.
- Heat olive oil, sauté garlic scapes for 2 minutes.
- Add arugula, cook until wilted.
- Pour eggs into pan, sprinkle goat cheese, cook until set.
- Finish under broiler for a golden top.
