- Preheat oven to 375°F.
- In a bowl, mix grated beets with cooked quinoa, feta cheese, parsley, salt, and pepper.
- Fill each bell pepper half with the beet and quinoa mixture.
- Drizzle with olive oil.
- Bake for 15 minutes or until peppers are tender.
Notes
You can also top with breadcrumbs before baking for extra crunch.
