- Heat olive oil in a pot, sauté onion and garlic until soft.
- Add beets and curry powder, cook for 5 minutes.
- Stir in lentils and coconut milk, simmer until lentils are tender.
- Season with salt, serve hot.

Garnish with fresh parsley.
