Beetroot and Spinach Frittata

- Preheat oven to 375°F (190°C).
- Whisk eggs in a bowl and season with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add grated beetroot and sauté for 5 minutes.
- Add spinach and cook until wilted.
- Pour eggs over the vegetables and sprinkle feta cheese on top.
- Transfer skillet to the oven and bake for 15 minutes or until set.
Notes
