Beetroot and Spinach Omelette

- Whisk eggs with salt and pepper.
- Heat olive oil in a non-stick pan over medium heat.
- Add beets and spinach, sauté for 3 minutes.
- Pour eggs over vegetables, cook until edges set.
- Sprinkle feta cheese, fold omelette, cook 2 more minutes.
- Serve warm.
Notes
For extra flavor, add a pinch of nutmeg.
