- Heat olive oil in a pot, add onion and sauté until soft.
- Add tofu and curry paste, cook for 5 minutes.
- Stir in bok choi and coconut milk, bring to a boil.
- Reduce heat and simmer for 20 minutes, season with salt and pepper.
