- In a skillet, heat olive oil over medium heat and add diced pancetta, cooking until crispy.
- Add garlic to the skillet and cook for an additional minute.
- Remove the skillet from heat, add the cooked spaghetti, and mix well with the pancetta and garlic.
- Quickly combine the hot pasta with the egg and Parmesan mixture, stirring rapidly to create a creamy sauce.
- Add a bit of reserved pasta water if needed to reach your desired sauce consistency.
- Season with salt and pepper to taste.
- Serve immediately, topped with extra Parmesan if desired.
