Classic Spaghetti Carbonara

- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, beat the eggs in a bowl and mix in the grated parmesan cheese.
- In a pan over medium heat, cook the pancetta until crispy, then add the minced garlic and cook for another minute.
- Once the pasta is cooked, reserve half cup of pasta water and drain the rest.
- Add the spaghetti to the pan with pancetta and garlic. Toss to coat the pasta.
- Remove the pan from heat and quickly stir in the egg and parmesan mixture, combining well.
- If needed, add a little reserved pasta water to create a creamy sauce.
- Season with salt and freshly ground black pepper to taste.
- Serve immediately, garnished with fresh parsley if desired.
