Classic Spaghetti Carbonara

- Bring a large pot of salted water to a boil, and cook the spaghetti according to package instructions until al dente.
- Meanwhile, in a large pan, heat olive oil over medium heat and sauté the minced garlic for 1-2 minutes.
- Add the pancetta to the pan and cook until it becomes crispy.
- In a separate bowl, whisk together the eggs and grated Parmesan cheese until well combined.
- Drain the spaghetti, reserving a cup of the pasta water.
- Add the hot spaghetti to the pan with the pancetta, and toss to coat.
- Remove the pan from heat and quickly pour the egg and cheese mixture over the spaghetti, stirring continuously. The heat from the pasta will cook the eggs.
- Add a little reserved pasta water if the sauce is too thick.
- Season with salt and freshly ground black pepper to taste.
- Garnish with chopped parsley if desired and serve immediately.
