- Preheat your oven to 375°F (190°C).
- Place the flatbreads on a baking sheet.
- Drizzle each flatbread with olive oil and spread it evenly using a brush or your fingers.
- Sprinkle mozzarella cheese evenly over the flatbreads.
- Distribute the sliced pickles, cherry tomatoes, and red onion over the cheese.
- Bake in the preheated oven for 12-15 minutes or until the cheese has melted and the flatbreads are slightly crispy.
- While the flatbreads are baking, mix lemon juice, dill, parsley, salt, and pepper in a small bowl.
- Once baked, remove the flatbreads from the oven and drizzle the herb mixture over the top.
- Cut the flatbreads into wedges and serve immediately.
