Dragon Tongue Bean and Quinoa Salad

- Rinse quinoa under cold water.
- Bring water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes.
- Steam dragon tongue beans until tender, about 5 minutes.
- In a large bowl, combine quinoa, beans, carrots, and green tomatoes.
- Whisk together lemon juice, olive oil, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Garnish with parsley before serving.
