- Sauté onion and garlic until soft.
- Add eggplant, tomatoes, curry powder, and cinnamon.
- Cook until eggplant is soft.
- Stir in coconut milk and simmer for 10 minutes.
- Serve over rice.

Garnish with fresh cilantro if desired.
