Garlic Scape Omelette

- Whisk eggs in a bowl with salt and pepper.
- Heat olive oil in a non-stick pan over medium heat.
- Add garlic scapes and bell pepper, sauté for 2 minutes.
- Pour eggs over vegetables, cook until edges set.
- Sprinkle cheese on top, fold omelette, and cook for 2 more minutes.
- Serve warm.
Notes
For a spicier kick, add a pinch of chili flakes.
