Ginger Garlic Chicken with Cauliflower Rice

- Heat 1 tbsp olive oil in a pan over medium heat.
- Season chicken with salt and pepper, then cook for 6-7 minutes per side until golden and cooked through.
- Remove chicken and set aside. In the same pan, add remaining olive oil, ginger, garlic, and onion. Sauté for 3 minutes.
- Add cauliflower rice, soy sauce, and honey. Cook for 5-7 minutes until tender.
- Slice chicken and serve over cauliflower rice. Garnish with sesame seeds and green onions.
