- Preheat a large skillet over medium heat.
- Butter one side of each slice of sourdough bread.
- Layer 4 slices of bread, butter side down, with cheddar cheese and sliced tomatoes. Place another slice of bread on top, butter side up.
- Grill the sandwiches in the skillet until golden brown and the cheese has melted, about 3-4 minutes per side. Press down gently with a spatula to ensure even cooking.
- While the sandwiches are grilling, prepare the herb salad. In a bowl, mix chopped parsley, pickle slices, olive oil, balsamic vinegar, salt, and pepper.
- Remove grilled cheese sandwiches from the skillet and cut each sandwich in half.
- Drizzle each sandwich half with Nutella.
- Serve each sandwich alongside the herb salad.
