Grilled Bok Choy and Avocado Toast

- Preheat grill to medium heat.
- Halve and pit avocados, then scoop flesh into a bowl. Mash with lemon juice, salt, and pepper.
- Brush bok choy with olive oil and grill for 5 minutes until tender.
- Toast bread slices on the grill for 2 minutes per side.
- Spread mashed avocado on toast, top with grilled bok choy.
- Season with additional salt and pepper if desired.
Notes
For a bit of heat, add red pepper flakes to the avocado mash.
