Grilled Chicken with Sweet Potato and Brussels Sprouts Salad

- Preheat your grill to medium-high heat.
- In a bowl, toss sweet potato cubes and Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper. Grill for 15-20 minutes, turning occasionally, until tender and slightly charred.
- In another bowl, mix the chicken breasts with the remaining olive oil, garlic powder, smoked paprika, balsamic vinegar, salt, and pepper.
- Grill chicken breasts for 6-7 minutes on each side or until fully cooked and internal temperature reads 165°F (75°C). Remove from grill and let rest for a few minutes.
- In a large salad bowl, combine lettuce, spinach, grilled sweet potatoes, and Brussels sprouts.
- Slice the grilled chicken and arrange on top of the salad. Drizzle with lemon juice.
- Garnish with chopped parsley before serving.
