- Preheat your oven to 425°F (220°C).
- In a large bowl, combine potatoes, carrots, and onion with 1 tablespoon of olive oil, half of the thyme, half of the rosemary, and a pinch of salt and pepper. Toss to coat evenly.
- In a separate mixing bowl, marinate the chicken legs with remaining olive oil, thyme, rosemary, garlic, lemon zest, lemon juice, salt, and pepper. Rub the mixture over the chicken thoroughly.
- Arrange the seasoned vegetables on a baking sheet in a single layer and place the chicken legs on top.
- Roast in the preheated oven for 50-60 minutes, or until the chicken is golden brown and the vegetables are caramelized, stirring vegetables halfway through for even cooking.
- Let the dish rest for 5 minutes before serving to allow flavors to meld.
