Mediterranean Lemon Herb Chicken Thighs

- Preheat oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a large ovenproof skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook until the skin is golden brown and crispy, about 5 minutes.
- Flip the chicken thighs and continue cooking for another 3 minutes.
- In a small bowl, combine lemon zest, lemon juice, minced garlic, oregano, thyme, and rosemary.
- Pour the lemon herb mixture over the chicken thighs in the skillet.
- Add the chicken broth to the skillet and bring to a simmer.
- Transfer the skillet to the preheated oven and roast until the chicken is cooked through and the internal temperature reaches 165°F (75°C), about 35 minutes.
- Garnish the chicken with chopped fresh parsley before serving.
