Mushroom and Avocado Stuffed Sweet Potatoes

- Preheat oven to 200°C (400°F).
- Prick sweet potatoes with a fork and bake for 45 minutes until tender.
- Heat olive oil in a pan and sauté mushrooms and onion until golden.
- Cut sweet potatoes in half and scoop out some flesh.
- Mix sweet potato flesh with mushrooms, onion, avocado, salt, pepper, and lemon juice.
- Stuff mixture back into sweet potato skins and serve warm.
Notes
Garnish with fresh herbs for added flavor.
