Pickle-Infused Grilled Cheese Sandwiches with Herbed Butter

- In a small bowl, combine the softened butter, chopped dill, parsley, chives, salt, and pepper to create the herbed butter.
- Spread a thin layer of mustard on one side of each of the 8 slices of bread.
- On 4 slices, mustard side up, layer slices of cheddar cheese, followed by thin slices of pickles.
- Top with the remaining 4 slices of bread, mustard side down, to create a sandwich.
- Preheat a skillet over medium heat.
- Spread a generous amount of herbed butter on the outside of each sandwich.
- Grill each sandwich in the skillet for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
- Remove from the skillet and let cool slightly, then cut each sandwich in half.
- Serve immediately while hot, pairing with extra pickles if desired.
