- In a small bowl, mix the Dijon mustard, minced garlic, black pepper, and honey to create a spread.
- Lay out 4 slices of sourdough bread on a flat surface and spread a generous layer of the mustard mixture on each.
- Top each of these slices with 2 slices of cheddar cheese, a layer of sliced pickles, and a sprinkle of fresh dill.
- Place the remaining 4 slices of bread on top to form sandwiches.
- Heat a large non-stick skillet over medium heat.
- Spread butter on the top layer of each sandwich.
- Place the sandwiches, butter side down, onto the skillet. Spread butter on the now top side of the sandwiches.
- Grill the sandwiches for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.
- Remove the sandwiches from the skillet and let them cool for a minute.
- Slice each sandwich in half before serving.
