Pickle-Stuffed Chicken Breast

- Preheat oven to 375°F
- Cut a pocket into each chicken breast
- Stuff each breast with pickles, season with salt and pepper
- Dip in beaten eggs, coat with breadcrumbs
- Bake for 20 minutes or until chicken is cooked through
