- Cook pasta according to package instructions.
- In the last 3 minutes of cooking, add diced beets to the pasta water.
- Drain pasta and beets. Mix in goat cheese until melted and creamy.
- Season with salt and pepper.
Notes
Add a handful of arugula for a peppery bite.
