- Preheat your oven to 400°F (200°C).
- In a large bowl, combine olive oil, ground cumin, smoked paprika, ground coriander, red chili flakes, garlic powder, salt, and pepper. Mix well to form a spice mixture.
- Add the sliced zucchini, carrots, green beans, and diced potatoes to the bowl with the spice mixture. Toss until the vegetables are evenly coated.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast the vegetables in the preheated oven for 50-60 minutes, or until they are tender and slightly golden, stirring once halfway through the cooking time.
- Remove the vegetables from the oven and drizzle with lemon juice.
- Garnish with chopped parsley before serving.
- Adjust seasoning with more salt and pepper if needed.
