Spiced Radish and Komatsuna Stir-Fry with Garlic Scapes

- Heat vegetable oil in a large pan over medium heat.
- Add cumin and mustard seeds, and sauté until they begin to crackle.
- Stir in the chopped garlic scapes, and cook for about 2 minutes until they are slightly softened.
- Add the thinly sliced radishes to the pan. Cook for 5 minutes, stirring occasionally.
- Sprinkle turmeric powder, garam masala, coriander powder, red chili powder, and salt over the radishes. Stir well to combine the spices with the vegetables.
- Add the chopped komatsuna to the pan and cook for another 5-7 minutes until it's wilted but still vibrant.
- Drizzle the lemon juice over the stir-fry and mix thoroughly.
- Remove from heat and garnish with fresh cilantro before serving.
