- Heat the olive oil in a large pan over medium heat.
- Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the sliced bell pepper and julienned carrots to the pan. Stir-fry for about 3 minutes.
- Add the ground coriander, turmeric powder, and red chili flakes. Stir well to combine.
- Toss in the pre-steamed new potatoes and cook for another 2 minutes, allowing the spices to coat them.
- Add the sliced napa cabbage and chopped kale, stirring occasionally until they wilt slightly.
- Mix in the chopped tomatoes and salt. Cook for another 2-3 minutes until everything is well combined.
- Drizzle with lemon juice and mix everything together.
- Garnish with fresh cilantro before serving.
