Spinach and Garlic Scape Omelette

- Whisk eggs with salt and pepper.
- Heat olive oil in a pan, add garlic scapes and spinach, sauté for 2 minutes.
- Pour eggs into the pan, cook until edges are set.
- Sprinkle feta cheese, fold omelette, cook for another 2 minutes.
- Serve hot.
Notes
For a fluffier omelette, add a splash of milk to the eggs.
